Sanda City in Hyogo Prefecture has been firmly established as a Kobe Beef production area since the Edo period thanks to the area’s natural environment, including the clear waters of the upper stream of the Muko River, and the outstanding breeding techniques developed by the local cattle farmers.
In 1986, the appellation “Sanda Beef” has been given as an award to a new beef cattle raised in Sanda City to distinguish its high quality and unique characteristics.
Only extremely high-quality beef that clears very strict regulations can be referred to as Sanda Beef, and of course, the number of shipments are limited.

Kishu Bincho Charcoal
Kishu Bincho charcoal is made from the wood of Japanese oak trees, and specifically the evergreen Ubame oak (Quercus phillyraeoides). When burning, this charcoal is characterized by strong low bright flames, relatively low convective heat, and a very long burning time.
Made of Carbon Steel
Vesta uses metal skewers made of carbon steel (piano wire) that are produced exclusively for our restaurant purposes. These skewers feature high thermal conductivity and transfer the heat of kiln from the interior of the meat to achieve quick cooking.

Extremely sharp, Echizen knives cut meat and fish without destroying their inner fibers, so the Umami flavors remains and spread out uncommonly on the palate.
Our tables are all designed and crafted by a 300 years old renowned manufacture based in Hiroshima prefecture called Fuchu Furniture.
The tables are all made from so called “bird’s eyes maple” wood, a high-class and precious wood that has a particular grain that reminds of a bird’s eyes.They are all manufactured by top class skilled craftsman.
Vesta employs “Kyosashimono woodwork” champagne coolers. Unlike stainless steel coolers, these coolers are characterized by beautiful white rings on a white wood surface.
